Changing my lifestyle and adopting a plant-based diet has changed my life for the better in many ways. During my teenage and young adult years, I suffered from irritable bowel syndrome in which eating “traditional American” foods that I grew up on would constantly cause my stomach to be upset. In my early 30s, I was having radiating pains around my rib cage. It was so uncomfortable, at times, it hurt to breathe. After being diagnosed with Barrett's Esophagus and being prescribed yet another “medication”, I thought there had to be a healthier way. I researched plant-based nutrition and thought, “I'll give this a try.” After one year, I am completely symptom free! I feel great!! Additionally, I’m not on any prescription medications!
As someone who grew up eating meat, cheese and other animal based products, I understand the challenge in making this beneficial lifestyle change to a plant-based diet.

Juicing
MY FAVORITE MORNING GREEN JUICE
INGREDIENTS
3 medium kale leaves
2 medium romaine lettuce leaves
1-2 stalk celery
1 inch piece of ginger
½ a lemon
½ cucumber
1 medium Granny Smith apple
INSTRUCTIONS
Juice these ingredients of order listed.
Add pineapple or beets once or twice a week.
Fresh mint and spinach - optional.
Beets are high in sugar, use minimally.
